Coleslaw by Fran W
Homemade coleslaw is better than store bought any day! Plus, it makes a deliciously crisp side dish.
To make this crisp, refreshing slaw you will need:
1 lb cabbage, thinly shredded
2 large carrots, grated (about a 1/2 cup)
1/2 c mayo
2 T raw sugar or honey
1 lemon, juiced
Salt and pepper to taste
What to do:
Make the dressing:
In a large bowl, whisk the mayo, sugar/honey, lemon juice, and salt and pepper together, then set aside for about 15 minutes to allow the flavors to meld together.

Prepare the cabbage and carrots:

While you are waiting for the dressing to marinate, thinly shred the cabbage with a serrated knife, grate the carrots, and place these ingredients in a separate bowl until needed.

Put it together:

Once the dressing is ready, add the cabbage and carrots to the bowl and mix everything together with a large spoon. Allow the coleslaw to marinate for a few hours in the refrigerator before serving.
This recipe makes about 1 quart of coleslaw.

Enjoy!
